Ingredients

  • 50 ml Vanilla Vodka
  • 15 ml Elderflower Cordial
  • 15 ml Fresh Lime Juice
  • 10 ml Monin Honey Syrup
  • 2 thin Slices Red Chili Pepper

Instructions

Official Recipe:

  1. Chill a Cocktail Glass in the freezer or by filling it with ice and water while you mix the drink.
  2. Add 50 ml vanilla vodka, 15 ml elderflower cordial, 15 ml fresh lime juice and 10 ml Monin honey syrup to a cocktail shaker.
  3. Slice 2 thin rings or strips of red chili pepper and add them to the shaker.
  4. Fill the shaker with plenty of ice cubes, almost to the top.
  5. Shake vigorously for 10–15 seconds until the shaker feels very cold and the ingredients are well aerated.
  6. Discard the ice and water from the Cocktail Glass if you used them for chilling.
  7. Double-strain the mixture into the chilled Cocktail Glass, using a fine strainer to catch chili seeds and ice shards.
  8. Garnish with a small red chili pepper on the rim or gently placed on the surface of the drink.

Note: Adjust the number and thickness of chili slices if you want more or less heat, but keep the overall balance delicate rather than fiery.

Tips

  • Choose the right vanilla vodka: A clean, not overly sweet vanilla vodka works best, letting the honey and elderflower provide the main sweetness.
  • Use fresh lime only: Bottled lime juice will flatten the drink; fresh-squeezed lime is crucial for brightness and balance.
  • Control the chili heat: Use thin slices from a mild red chili, avoiding too many seeds. Taste and adjust in future rounds to match your ideal spice level.
  • Double-strain carefully: Fine-straining improves texture and removes chili seeds and large pulp, giving a silky, professional finish.
  • Balance the sweetness: If your elderflower cordial is very sweet, you can slightly reduce the honey syrup (e.g., to 7–8 ml) to avoid a cloying result.
  • Serve well chilled: This cocktail shines when very cold; shake hard with plenty of ice and serve immediately.
  • Presentation matters: A vibrant red chili garnish against the pale drink creates strong visual contrast—keep the glass rim clean for an elegant look.

  • Extra Spicy Fifty: Add an additional chili slice to the shaker or lightly muddle one slice before adding ice for a more intense heat.

  • Smoky Spicy Fifty: Rinse the glass with a few drops of smoky mezcal before straining to add a faint smoky aroma.
  • Herbal Spicy Fifty: Add 2–3 fresh basil leaves to the shaker and double-strain well for a fresh herbal layer.
  • Low-Alcohol Spicy Fifty: Reduce the vanilla vodka to 30 ml and increase the elderflower cordial slightly, keeping the same chili and lime levels.

The Spicy Fifty was created in the mid-2000s by renowned London bartender Salvatore “The Maestro” Calabrese. He developed the drink at his bar Fifty in St James, London, which inspired the cocktail’s name. Calabrese wanted a vodka cocktail that combined approachability, elegance and an unexpected spicy twist.

The drink quickly gained attention in the cocktail world for its masterful contrast of soothing vanilla and honey with a measured chili heat. Its flavor structure—built like a refined sour with floral and spicy accents—helped it spread to high-end cocktail bars around the globe.

Today, the Spicy Fifty is recognized as an official IBA cocktail, cementing its status as a modern classic. It is widely regarded as a reference point for bartenders exploring how to introduce spice into cocktails without overpowering the palate.
