Ingredients

  • 60 ml Tequila 100% agave
  • 30 ml Fresh lime juice
  • 30 ml Agave nectar

Garnish: Lime slice

Tommy’s Margarita is a contemporary classic that strips the Margarita down to its purest essence: tequila, lime, and agave. By replacing the traditional orange liqueur with agave nectar, this drink showcases the natural character of 100% agave tequila with a silky, rounded sweetness.

This version is brighter, cleaner, and more agave‑forward than the classic Margarita. The balance of tart fresh lime and rich agave nectar creates a smooth sour profile that is remarkably approachable, even for guests who claim not to like tequila. Simple in composition but refined in flavor, Tommy’s Margarita has become a benchmark tequila cocktail in bars around the world.

Recognized by the IBA (International Bartenders Association) as an official cocktail, Tommy’s Margarita is a must‑know recipe for any serious home or professional bartender.

Instructions

Official Recipe:

  1. Chill a Rocks Glass by filling it with ice and setting it aside while you mix the drink.
  2. Pour 60 ml of 100% agave tequila into a cocktail shaker.
  3. Add 30 ml of fresh lime juice to the shaker.
  4. Measure 30 ml of agave nectar and add it to the shaker.
  5. Fill the shaker with plenty of ice cubes.
  6. Shake vigorously for about 10–15 seconds until the shaker feels very cold on the outside.
  7. Discard the ice from the chilled Rocks Glass.
  8. Fill the glass with fresh ice cubes.
  9. Strain the cocktail into the Rocks Glass over the fresh ice.
  10. Garnish with a fresh lime slice on the rim or floated on top.

Note: Adjust the sweetness slightly by adding or reducing 5–10 ml of agave nectar to taste, but keep the basic 2:1:1 structure for balance.

Tips

  • Use 100% agave tequila: The recipe depends on the clean, vegetal sweetness of 100% agave tequila. Avoid mixto tequilas, which will make the drink harsher and less elegant.
  • Choose the right tequila style: Blanco tequila gives a bright, peppery cocktail, while reposado adds subtle vanilla and oak notes. Both work, but keep the profile dry and agave‑driven.
  • Fresh lime only: Bottled lime juice will flatten the drink. Always squeeze limes just before mixing and fine strain if there is too much pulp.
  • Balance the agave nectar: Agave nectar can vary in sweetness and thickness. If it is very thick, dilute it 1:1 with water to create an agave syrup that is easier to measure and integrates better when you shake.
  • Shake hard and short: A vigorous shake ensures proper dilution and emulsifies the agave nectar with the citrus, giving the drink a smooth, slightly frothy texture.
  • Ice quality matters: Use solid, fresh ice cubes in both the shaker and serving glass to avoid over‑dilution and to keep the cocktail cold for longer.
  • Presentation counts: A clean Rocks Glass, a neat lime slice, and no dripping on the rim elevate a simple drink into a bar‑quality cocktail.

Classic Variations

  • Classic Margarita: Add 15–20 ml of orange liqueur (like Cointreau) and reduce the agave nectar slightly; can be served with a salt rim.
  • Tommy’s Margarita Up: Shake and strain into a chilled Cocktail Glass without ice for a more elegant, spirit‑forward presentation.
  • Tommy’s with Salt Rim: Lightly rim half the glass with fine sea salt to add a savory edge and highlight the citrus and agave.
  • Smoky Tommy’s: Substitute part of the tequila (15–20 ml) with mezcal for a smoky, complex twist.
  • Spicy Tommy’s: Muddle a few slices of fresh jalapeño in the shaker before adding the other ingredients for a gentle heat.

Flavor Profile

On the first sip, Tommy’s Margarita delivers bright, tangy lime with a gentle sweetness that spreads smoothly across the palate. The mid‑palate reveals the agave character of the tequila: vegetal, slightly peppery, and earthy, supported by the round, honey‑like body of the agave nectar.

The finish is clean and refreshing, with lingering citrus and subtle agave notes rather than the sharp bite often associated with lower‑quality tequila cocktails. Overall, it is dry‑leaning but soft, intensely agave‑driven, and highly drinkable.

History

Tommy’s Margarita was created in the early 1990s by Julio Bermejo at his family’s bar and restaurant, Tommy’s Mexican Restaurant, in San Francisco. Seeking to showcase quality 100% agave tequila, Bermejo simplified the classic Margarita by removing the orange liqueur and sweetening the drink exclusively with agave nectar, the same plant from which tequila is made.

This seemingly small adjustment fundamentally changed the character of the cocktail, putting tequila center stage and inspiring a new appreciation for well‑made agave spirits. As the cocktail renaissance grew, bartenders around the world adopted Tommy’s Margarita as the definitive modern tequila sour.

The drink’s importance was cemented when the International Bartenders Association (IBA) recognized Tommy’s Margarita as an official IBA cocktail, placing it alongside the world’s most iconic recipes. Today, it is considered an essential tequila cocktail and a standard by which bars are often judged.

Cheers!
