Bramble
A modern classic gin cocktail with bright lemon, rich blackberry, and a refreshing crushed-ice texture.
Ingredients
- 50 ml Gin
- 25 ml Fresh Lemon Juice
- 12.5 ml Sugar Syrup
- 15 ml Crème de Mûre (blackberry liqueur)
Garnish: Lemon slice and fresh blackberries on top
The Bramble is a modern classic gin cocktail created in the 1980s that perfectly balances bright citrus, juniper notes, and lush blackberry sweetness. Served over a mound of crushed ice, it is as visually striking as it is refreshing, with the blackberry liqueur cascading through the drink like a late-summer berry patch.
Structurally, the Bramble is a twist on the classic Gin Sour: gin, fresh lemon juice, and sugar syrup form the backbone, while a float of Crème de Mûre adds color, aroma, and complexity. The result is crisp, tangy, and gently sweet, with a silky berry finish.
This cocktail is a favorite in cocktail bars worldwide because it is simple in composition yet elegant in presentation. It is also an official IBA (International Bartenders Association) cocktail, making it a benchmark recipe for both home enthusiasts and professional bartenders.
Instructions
Official Recipe:
- Chill an Old Fashioned Glass by placing it in the freezer or filling it with ice and water while you prepare the drink.
- Fill a cocktail shaker with ice cubes.
- Pour the gin, fresh lemon juice, and sugar syrup into the shaker.
- Shake vigorously for about 10–12 seconds until the shaker is well chilled.
- Discard the ice and water from the Old Fashioned Glass if you used them to chill it.
- Fill the glass completely with fresh crushed ice, forming a small mound above the rim.
- Strain the shaken mixture over the crushed ice into the glass.
- Pour the Crème de Mûre slowly over the top of the drink in a circular motion, allowing it to trickle through the ice.
- Garnish with a lemon slice and a couple of fresh blackberries on top of the ice.
Note: Adjust the sweetness by slightly increasing or decreasing the sugar syrup depending on the acidity of your lemon juice and your personal taste.
Tips
- Use quality gin: Choose a London Dry or a classic-style gin with clean juniper and citrus notes. Overly floral or heavily flavored gins can overwhelm the balance.
- Fresh lemon is essential: Bottled lemon juice will flatten the drink. Freshly squeezed juice provides the bright acidity that defines a proper Bramble.
- Crushed ice matters: Crushed ice gives the Bramble its signature texture and allows the Crème de Mûre to cascade beautifully. Use a mallet, ice crusher, or pulse in a blender briefly.
- Control dilution: Because crushed ice melts quickly, shake the drink well but not excessively. Over-shaking plus melting ice can water down the flavors.
- Pour the liqueur slowly: Drizzling the Crème de Mûre over the top in a spiral pattern creates an attractive gradient and better integration as you sip.
- Glassware temperature: A well-chilled Old Fashioned Glass keeps the crushed ice from melting too quickly and maintains the structure of the drink.
- Balance to taste: If your Crème de Mûre is very sweet or very intense, you can reduce the sugar syrup slightly or increase the lemon juice by 5 ml.
Classic Variations
- Red Bramble: Replace Crème de Mûre with Crème de Cassis (blackcurrant liqueur) for a darker, richer berry profile.
- Raspberry Bramble: Use Chambord or raspberry liqueur instead of blackberry liqueur for a brighter, more aromatic berry note.
- Bramble Royale: Top the finished drink with a splash of dry sparkling wine for extra effervescence and elegance.
- Winter Bramble: Add a dash of spicy bitters (such as aromatic or chocolate bitters) and use a more robust gin for a deeper, colder-weather version.
- White Bramble: Shake in a small barspoon of elderflower liqueur and use a lighter hand with the Crème de Mûre for a floral, delicate twist.
Flavor Profile
On the first sip, the Bramble delivers a bright, zesty hit of lemon supported by the crisp backbone of dry gin. The mid-palate reveals layers of berry sweetness from the Crème de Mûre, mingling with the botanicals of the gin and the gentle sweetness of the sugar syrup.
As the drink dilutes slightly over crushed ice, the flavors soften and integrate, turning sharper citrus edges into a more rounded, fruit-forward experience. The finish is refreshing and clean, with lingering blackberry notes and subtle juniper on the palate.
History
The Bramble was created in the mid-1980s by legendary British bartender Dick Bradsell at Fred’s Club in Soho, London. Inspired by memories of picking blackberries on the Isle of Wight as a child, Bradsell set out to design a drink that captured the essence of British hedgerows in a glass.
He took the simple structure of a Gin Sour and added a float of blackberry liqueur over crushed ice, both for flavor and for the striking visual effect as the liqueur seeped through the ice. The name “Bramble” refers to the thorny blackberry bush common across the UK countryside.
Over time, the Bramble became a cornerstone of the modern cocktail revival and is now recognized as an official IBA cocktail in the “New Era Drinks” category. Its enduring popularity comes from the perfect balance of accessibility, seasonality, and visual appeal, making it a staple in cocktail bars around the world.
Cheers!
